El Dorado

3.3 lbs Muntons's plain extra light dry malt
2 lbs rice solid powder
1 oz saaz flavor
.5 oz saaz aroma
.5 lb carapalis grain steeped
nottingham ale yeast

Excellent light Cerveza. Golden color. Nice spicy aftertaste, different aroma than corona but a very nice version, especially w/lime!

El Dorado II

3.3 lbs Muntons's plain extra light dry malt
2 lbs rice solid powder
1 oz Hallertau flavor
.5 oz Saaz aroma
nottingham ale yeast

Obviously just a slight variation to El Dorado- but very different. Much sweeter, almost fruity. Excellent like the first.

Holidaze

3 lbs dry light malt
3 lbs dry amber malt
1 pack priming sugar
.5 lb belgian candy sugar
2 tbsp ground allspice
2 tbsp powdered ginger
2 sticks cinnamon (2 inch)
1 oz Hallertau aroma
1 oz Tettnang flavor

Awesome holiday ale. Spice is tasteful but not overpowering. Will lighten the allspice a bit next year, as that was the dominant flavor, and boost the cinnamon. May also add grains, but it didn't need them. A neighborhood favorite.

Killarney Red

3.3 lbs plain light malt extract
2 lbs plain dry light malt
10 oz 60L Briess grain
1 oz Briess Black Patent
1 oz Willamette aroma
1 oz Willamette flavor

Excellent version of Killians. Nice and hoppy, but not overpowering- very drinkable. If you like Killians, give this a shot. Ageing is very good for this batch.

BlueBerry Hill

2 tins Muntons Plain Wheat Malt Extract
1 oz Hallertau Hops flavor
1/2 oz Hallertau aroma
2 oz liquid blueberry extract

Simple but great tasting blueberry wheat beer. As it ages, the blueberry becomes more subtle. Very drinkable, not overpowering.

Sam Adams #1 - to be named

.5 lb crystal 10L
6 lbs pale extract
1 oz East Kent Golding hops (bittering)
.5 oz Fuggle hops (bittering)
.5 oz Fuggle hops (flavor)
1 oz Saaz hops (aroma)
Windsor yeast

Add both bittering hops at boil. Add flavor hops after 45 mins, add the aroma hops at 55 mins. Fermenting, will update how it turns out in a month or two!

Coronado

3 lbs extra pale extract
3 lbs brewer's corn syrup
.75 oz Tradition hops (bittering)
.25 oz Tradition hops (aroma)
Nottingham yeast

A different approach to Mexican cerveza and Corona cloning. Will add updates once this is ready, in a few months. Tradition hops and using corn syrup are both new to me.

Irish Clout

4 lbs plain dark dry extract
6 oz Briess roasted barley
8 oz Malto Dextrin
1 oz Perle hops(bittering)
1 oz Saaz hops (aroma)
Nottingham yeast

A sweet, dark stout. Fairly bitter and hoppy. First sip is like drinking coffee.. a sipping beer, not one of my faves or one you want to put away fast, but a good irish stout.

.25 lbs Crystal 120 L
6 lbs Munich extract
1 oz Hallertau hops (bittering)
.5 oz Cascade hops (flavor)
.5 oz Cascade hops (aroma)
Saflager yeast
